I've tried to make a mask using polygon, then adding some brush strokes to it, then undoing - there seem to be an issue with it as the undo seems to remember a different polygon. But if you keep undoing one or two more steps, then redoing - you can get an editable polygon in the right shape back.
Doing this test, there were a few more issues that I noticed - e.g. transparency slided in paint going to 4000+ % and the radius slider form Paint showing behind the Apply button in Rectangle, Oval and Polygon buttons when the tools were switched. It all seems to have to do with Undo tracking.
I'll report when I figure out how to reproduce it more consistently.

I did have that issue too with the polygon...came back to a rectangle lower than where mine was placed and it had a large number of nodes when mine that I was testing with only had 4....
