I'm missing something here. Why would you want to strip out the EXIF data?

For small JPG files intended for on-line viewing, EXIF, ICC profile and other metadata can represent a significant portion of the file size (often more than a 'clean' JPG with the metadata stripped). JPG's without metadata will show just the same in most web browsers, but will load much faster. Another reason may be privacy and/or commercial considerations.
